Pesto Halloumi Panini

Pestos are a great way to add flavour to your food. When made in bulk in ice trays, pestos freeze very well. Making your own pesto is much cheaper than the bought version.

Here is my Basil Pesto Recipe:

2 cloves garlic

2 cups fresh basil leaves, rinsed

1/2 cup lightly roasted pine nuts

1/4 cup parmesan cheese

1/2 cup good quality extra virgin olive oil

salt and pepper to taste

Method:

This is unbelievably easy. Throw all the ingredients into your food processor and blend until smooth. Freeze in use trays and use when needed.

 

Panini:

We usually have something light on a friday night. Panini’s can be filled with a variety of fillings and vegetables. I love using fresh ingredients as i feel it goes well with the crisp of the bread.

I have layered pesto with lettuce, baby spinach, sweet pepper rings, cucumbers, rosa tomatoes, a drizzle of my favourite Mediterranean balsamic reaction and topped it with Grilled halloumi cheese. A squeeze of lemon juice, and a grind of black pepper before tucking in is a must!
