Spanish Eggs

This delicious breakfast is quick and easy especially if you have a tomato sauce ready. The directions are:

Cook 1/2 a cup of tomato sauce in a pan with garlic, salt and black pepper. Once simmering break 2 eggs into the bubbling sauce. Lower the heat and close the lid. Two minutes later the yolks and whites will be cooked in the fragrant sauce. I have topped my eggs with pesto but you can even garnish with fresh herbs.

Serve over whole wheat toast or a slice of fresh ciabatta.
