Vegetable Omelette

I have making some delicious egg Suhoor meals using the liquid egg whites. Since we have eggs almost everyday, this year I wanted to try out the liquid egg whites I purchased from Woolworths instead of using so many while eggs. Liquid egg whites can be purchased from other stores if you live out of South Africa. This is a very filling breakfast that will keep you going all day!

Suhoor is always for two, since my girls are still too young to fast. They do nibble with us if they are awake.

An omelette for 2 you will need:

– 2 whole eggs

– 1/2 cup liquid egg white

Post Taraweeh, whisk the eggs in a glass container and store in the fridge.

The previous Iftaar chop:

– tri colour peppers,

– red onion

– roma tomatoes (deseeded)

– mushrooms

You will need about 3/4 cup of chopped vegetables.

At Suhoor, Warm a skillet on medium heat. Mix the eggs, vegetables, add a pinch of salt and a grind of black pepper. Once the skillet is warmed, pour in half the omelette mixture. Let the bottom cook well before turning over. Once turned over, drizzle a little bit of cheese in the middle, close the omelette and serve with freshly toasted bread.
