Vanilla infused Nutty Milk

This month’s Recipe Redux Is all about Spirits and Extracts and since vanilla is my most favourite extract, It will have to be vanilla! My Mom always used to make this drink for me when I was writing exams, and she always used to say, its brain food!!! Drink UP!! This is so very true, the nuts are full of  healthy fats that are good for the brain and heart! The vanilla releases a delightful flavour and aroma to the mix, creating a delicious drink when boiled with the milk! This drink is great pre bed time and is ann excellent source of essential fats when pregnant and breastfeeding! The habit of drinking milk has stayed with me and since this Ramadan has been a chilly one in South Africa,  this recipe is my favourite drink to accompany my date when breaking fast.

Vanilla Nutty Mix:

1 vanilla pod, sliced lengthways and  the oily, flavourful middle removed

cut the pod into 2cm long sticks

1/2 cup slivered almonds

1/2 cup sliced pistachios

1/4 cup chopped Walnuts

4 T vermicilli (fine)

1/2 t ghee

Method:

-Heat a pan on low heat and braise all the above ingredients with the ghee (throw the peel of the pod also in). Stirring until the mixture is fragrant. Remove from heat and let it cool. Store in an air tight container.

To make the milk drink you will need:

1 cup fat free milk

3 t nutty mix

pinch of cinnamon

pinch of nutmeg

Method:

Heat the milk on medium heat and add the nutty mix. Stir well Until the milk starts to boil. Remove from heat and serve with a date or your favourite low GI rusk!
