Accidental Chocolate Muesli

Screenshot 2014-11-15 22.34.18There is no greater breakfast, than a healthy breakfast- and this is an indulgently healthy one especially if you love a good dark chocolate treat! This accidental- and I call it accidental because I never knew the muesli would be hot enough to melt the chocolate and coat the ingredients- and the result is delicious. It’s filled with good fats and fibre – and will spoil you enough to never ever by another box of commercially made muesli again!

You will need:

– 1/2 cup dark chocolate chips

– 1/2 cup desicated coconut

– 1/2 cup chopped/ slivered almonds

– 1/4 cup cranberries

– 1/4 cup dried cherries

– 4 T sesame seeds

– 4 T sunflower seeds

– 2 T pumpkin seeds

– 2 T chia seeds

– 2 cups rolled oats

– 1/2 cup chopped walnuts

– 1/2 cup pecan nuts, chopped

– 2 long cinnamon sticks

– 3 T vegetable oil

– 2 T honey

– 1/4 cup dark maple syrup


– Preheat your oven to 200 degrees celcius. Throw the oats, cinnamon sticks and coconut into a heat proof bowl and roast in the oven for 10 minutes, or until you can smell the cinnamon roasting. Stir once removed from the oven.

– Gently heat the oil, honey and maple syrup on the stove until the honey is just melted and the mixture has combined. Drizzle this over the oats, stirring well until combined. Roast again in the oven for another 10- 15 minutes. It is important to frequently stir the oats mix so that it does not burn.

– Remove from the oven, throw in all the dried fruit, nuts and seeds, stir well and again, roast in the oven for another ten minutes until golden brown and the oats are crispy.

– Remove from the oven, throw the chocolate over and stir immediately. The chocolate will melt, coating the oats and nuts. Do this carefully and avoid tasting just yet as the ingredients are really hot!

– Allow the muesli to cool before transferring to an airtight container.

– Once mixed with milk- the muesli will turn the milk into a delightful chocolaty drink!
